Roasted Organic Mushrooms
2 lbs mixed organic mushrooms, dirty butt ends removed
1/4 cup olive oil (regular oil is best, not extra virgin, it’s too heavy)
6 sprigs fresh thyme
Salt and freshly ground black pepper to taste
Preheat the oven to 450 degrees.
Dump the mushrooms onto a cookie sheet. Dribble the oil over them. Scatter the thyme over the mushrooms, Add salt and pepper to taste.
Place the mushrooms in the oven and roast for about 15 minutes, until the mushrooms are fork tender. They will have decreased in volume by at least 50%.
